Tomás grew up on a farm outside Évora and cooked in restaurants in Porto and Copenhagen before coming home. He runs the Quinta kitchen around the garden and the village market, and he knows every path across the hills. On walking weeks he leads the group himself, and the picnic lunches are the part guests talk about most.
